He trained at Luis Irizar’s cooking school while studying law. His first job was at the Zortziko restaurant. After passing through several restaurants and even the pastry workshop of the great Paco Torreblanca, this nonconformist and competitive chef opened La Casona del Judío in Santander in 2012, quickly gaining professional recognition. Michelin Star ’22, Green ’23 and 2 Soles Repsol ’15’22 as well as best restaurant The Fork ’20.
