Paco Pérez represents the haute cuisine of the ‘Mar d’Amunt’, as he likes to define this region of Girona, where he grew up. Miramar, his nerve centre and home port, has two Michelin stars. The same as Enoteca, his gastronomic proposal at the Arts Hotel in Barcelona. But everything starts and everything happens in Llançà, where he and his wife, Montse Serra, run what was once a hostel that Montse’s family built in this small fishing village on the Costa Brava.
