Originally from Santander and from Burgos by adoption, in 2004 he started working in well-known restaurants in the north of Spain. In 2007 he arrived at El Vallés, a family hotel-restaurant in the town of Briviesca, where his “Merluza del Valles” aroused the curiosity of Basque critics. In 2015 he opened his first restaurant in Burgos, Cobo Vintage, which earned him a Michelin star. In 2020 he opened his new project, Cobo Estratos, where history and the present come together in Cobo Evolución with the Humanidad menu.
