Kiko Moya of the restaurant L’Escaleta, two Michelin Stars and three Repsol Suns, works in search of his own identity, based on the flavors of the region, aims to bring something new from those flavors and smells that transport him to childhood; moss, rosemary, saffron, pollen, almonds, figs, lavender … Mediterranean in its purest form! Next to him, Xesc Reina, one of the greatest charcuterie masters in Spain, a guru of sobrasadas from Mallorca who rescues medieval sausages and is the favorite of haute cuisine chefs. Award for the best sausage in Europe… Together we will learn about the roots of the product, its evolution and the legacy we are leaving to new generations.
