Miguel Caño, former head chef at Mugartiz, decided, as his restaurant’s team jerseys say, to “keep aiming for the moon”. He returned to Haro, La Rioja, his hometown, to create Nublo in a 16th century palace. There, dishes are born from an idea, a technique and a product. But not everything is flavor, there are also aromas that captivate their customers. With this premise we have decided to make an unbeatable match. The kitchen of Miguel Caño and the knowledge of the creator of aromatic projects Nicolas Roché. Nicolas, an expert in aromas and sommelier more than international, Tokyo, Montreal, Austin, Brussels, Macao and Paris … some of the cities where he has developed projects. Together they will make us travel through the aromas of the pantry of the Mediterranean Diet.
